My Very First Vegan Choc Chip Cookie!



Okie... I never thought I would be able to do it, but here it is... my very first vegan choc chip cookie made from corn oil and maple syrup goodness! The recipe is from Dreena Burton, who has a recipe book called Vive Le Vegan. This CC cookies are very simple and easy to do.

There were two problems I had though.. one it was a tad too sweet for my taste. Would have preferred if I used less maple syrup. Also, I underbaked them a little. (The fault is totally mine) so it was a bit cake like rather than crispy.

It was really delicious though and the 12 big cookies were gone in minutes! :)

A Traditional Noodle Dish


This is the way my mum and my grandma make their mee goreng... It's dry and made with chili paste. I like mine a little wet with some nice broth. But then, who am I to complain when I get good food!

My Very First Vegan Briyani Rice

I decided that I wanted to try making my own briyani rice. So, I got some basmati rice from my mum and tried my hand at it. the rice turned out nice, only that I didn't put in enough salt. So, it was a little bland.

I made some mock mutton curry to go along with the briyani and the balance was nice. I thickened the curry with some ground cashews instead of the normal cow's milk. Coconut milk can also be added to the gravy to thicken it and make it richer. However, I think I will add more spices to the rice next time for a more fragrant and spicy.

Lunchbox #02 - Basmati Fried Rice and Mixed Vegetable Stir Fry

This will be my lunch tomorrow. Basmati rice that was stir fried with cabbage, green bell pepper and Nameko Mushrooms (on sale in Giant now!). Seasoned with soy sauce and pepper. I also made a side dish of spinach, cabbage, carrots and nameko mushroom all sauteed in sesame oil and oyster sauce. Comes with a nice serving of sweet sourish green grapes.

LunchBox #01 - Chapatti and Indian-Style Mashed Potato

I have been lunching in for the longest time ever and I've decided to put that it is another opportunity to blog. Furthermore, I have got myself a "Lock-n-Lock' container. So the timing is perfect. I have decided that I will try to go as vegan as possible withe the lunchbox idea (much to my mother's unhappiness!)

I present to you chapatti cut into wedges with a sizable serving of Indian style mashed potatoes with a spring of mint stolen from my mum's pot! I had it for lunch with a sliced apple soaked in salt water to prevent oxidization and a nice serving of dried guava and cranberries!

Tofu Scramble


I saw this on Everyday Dish. It is a good place to get vegan recipes. Just a simple tofu scramble with some mixed vegetable to tide over some hungry moments!

Applesauce and Banana Cupcakes

I had some applesauce that I bought cheaply at Cold Storage and some bananas in the fridge browning away. So, I looked up a vegan recipe to try. It didn't turn out as I would have liked it to but it was quite nice after it cooled down!

Tofu in my Spaghetti....



I recently made some spaghetti with tofu and mushroom... I lightly fried cubed tofu, sauteed some onions, garlic and tomatoes. Tumbled in a can of pasta sauce, adjusted the flavours and I was done. I decided to go a bit gourmet by soaking the hot cooked pasta in some cold, iced water. The pasta tasted springy and firm to eat... i do suppose it helps :)

Another of Mum's Vegan Creations :)

I had been craving for some good old fashion mee siam with peanut gravy and I asked my mum to make me a vegetarian version. Of course she grumbled because traditionally it contains dried ikan billis and dried shrimps. Her concern was basically how its gonna taste if it was veganised.

Being the affectionate mother, she made it for me over the last week. She added more vege like bean sprouts, green vege and tofu. The sauce was peanut sauce - a bit sweet and spicy. I  had it for dinner and breakfast the next day :)

I don't have the recipe for this but if anyone needs it I can bug my mum for it!
